Banana Pecan Muffins - cooking recipe
Ingredients

3 (5 oz.) very ripe bananas, mashed 1 1/3 c.
1 c. sugar
2 eggs, lightly beaten
3/4 c. canola oil
2 c. all-purpose flour
2 Tbsp. baking soda
3 Tbsp. buttermilk
1 c. pecans
Preparation

Preheat oven to 300\u00b0.
Spray 12 to 14 (2 1/2-inch) muffin cups generously with nonstick coating or line with paper bake cups.
In large bowl, combine bananas and sugar.
Mix well.
Add eggs and oil.
Stir until blended.
Add flour, baking soda and buttermilk, mixing well.
Stir in pecans.
Fill muffin cups level full.
Bake at 300\u00b0 for 25 to 30 minutes until toothpick inserted in center comes out clean.
Yield: 12 to 14 muffins.
