Salmon Delight - cooking recipe

Ingredients
    1 Tbsp. margarine
    1/2 small onion, diced
    2 Tbsp. green pepper, diced
    1 can red salmon
    1 c. cooked rice
    1 can cream of mushroom soup
    1 c. dry bread crumbs
    2 Tbsp. sliced almonds
Preparation
    Spray 1 1/2-quart casserole with nonstick oil.
    Set aside. Melt margarine; cook onions and green peppers until soft.
    Drain and save salmon liquid.
    Mix salmon, rice, onions and green peppers.
    Add milk to salmon liquid to make 2/3 cup of liquid. Combine with soup and mix until blended.
    Cover bottom of casserole with 1/2 cup bread crumbs.
    Place one-half salmon mixture over crumbs evenly.
    Cover with one-half soup mixture. Repeat salmon/soup layer and cover with remaining crumbs.
    Melt 2 tablespoons margarine and drizzle over crumbs.
    Top with almonds. Bake at 350\u00b0 for 45 minutes.
    Makes six 1-cup servings.
