Broccoli Cheese Soup - cooking recipe

5 Tbsp. margarine
1/4 c. chopped yellow onion
1 large clove garlic, peeled and chopped
3 c. broccoli florets
1/2 c. chopped celery
1 c. chopped carrots
1/2 c. chopped green onion
2 1/2 c. chicken broth
1/4 c. flour
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. nutmeg
1 1/2 c. skim milk
4 oz. sharp Cheddar cheese, grated
Preparation

In heavy 4-quart kettle, melt 1 tablespoon margarine and saute yellow onion and garlic for 2 minutes.
Stir in chicken broth. Add broccoli florets, carrots, celery and green onion.
Bring to a boil over high heat; reduce heat to simmer.
Cover, leaving cover just slightly ajar to prevent broccoli from turning olive drab in color.
Simmer for 10 minutes.
