Potato Soup - cooking recipe
Ingredients

2 c. diced celery
2 c. diced onion
3 c. diced potatoes
1/2 c. margarine
1 tsp. salt
1 egg, beaten
3/4 c. flour
1 qt. milk
salt and pepper to taste
minced chives (optional)
Preparation

Place first 4 ingredients in a large pot.
Cover with water and simmer until tender.
While this cooks, make egg balls by mixing 1 teaspoon of salt with egg; add flour gradually until dough is stiff enough to handle (you may not need all the flour). Roll dough into marble size balls.
When vegetables are tender, add egg balls and more water, if needed, to cover.
Cover and simmer for 20 minutes.
Add 1 quart of milk and heat to the boiling point but do not boil.
Season to taste and sprinkle each serving with minced chives.
Yield:
8 to 10 servings.
