Vegetable-Barley Soup - cooking recipe

Ingredients
    2 Tbsp. salad oil
    1 onion, chopped
    6 c. beef broth
    2 tsp. dried basil leaves
    2 tsp. dried Italian seasoning
    1/2 tsp. salt
    1/4 tsp. pepper
    1/2 c. uncooked barley, rinsed
    1 can crushed tomatoes
    1 (1 lb.) pkg. frozen mixed vegetables
Preparation
    In cooking pot, heat 2 tablespoons salad oil; add onion.
    Cook 3 minutes.
    Add beef broth, basil, Italian seasonings, salt and pepper.
    Bring to boiling.
    Simmer, partially covered, 30 minutes. Add barley.
    Simmer 30 minutes or until barley is tender.
    Add tomatoes and vegetables.
    Return to boiling.
    Simmer until vegetables have cooked.
    Makes 8 servings.
