Cream Of Cucumber Soup - cooking recipe

Ingredients
    2 cucumbers
    1 onion, chopped
    2 Tbsp. butter
    2 c. chicken stock
    salt and pepper
    3/4 c. sour cream
    chopped chives
Preparation
    Peel, seed and chop coarsely the cucumbers.
    Set aside.
    In medium size saucepan, saute the onion in butter until tender.
    Add the cucumber.
    Cover with stock and simmer for 30 minutes.
    Puree in a blender until smooth.
    Correct seasoning; add the sour cream and blend again.
    Refrigerate until ready to serve, topped with chives.
