Black-Eyed Pea, Sausage And Rice Casserole - cooking recipe
Ingredients

1 c. regular rice (uncooked)
2 pkg. (1 box) Lipton chicken noodle soup mix
3 c. hot water
1 can black-eyed peas with liquid
1 lb. hot pork sausage
1 medium onion
1 to 2 jalapeno peppers, chopped fine
Preparation

Saute onion, sausage and peppers until sausage is browned; drain off grease.
In a large oblong dish, mix rice, soup mix and water.
Add meat mixture and peas.
Mix well.
Cover with foil. Bake at 350\u00b0 for 45 minutes.
