Zucchini Casserole - cooking recipe
Ingredients

4 to 6 c. grated zucchini (rind and all)
1 carrot, grated
1 onion, diced
1 stick margarine
1 pkg. Stove Top cornbread stuffing mix
1 c. cream of chicken soup
1/2 pt. sour cream
1 1/2 c. grated Cheddar cheese
Preparation

Mix zucchini, carrot and onion and steam until tender.
Drain. Mix the following:
margarine, cornbread, chicken soup, sour cream and Cheddar cheese.
Mix sauce mixture with vegetables and place in casserole.
Bake 1 hour at 350\u00b0.
