Dietetic Fruitcake - cooking recipe

Ingredients
    2 c. water
    1 c. unsweetened applesauce
    1/2 tsp. nutmeg
    3/4 c. cooking oil
    2 c. raisins
    2 eggs
    1 tsp. baking soda
    1 1/4 tsp. cinnamon
    2 c. whole wheat flour
    1 tsp. vanilla
Preparation
    Cook raisins in water until most of the water is gone.
    Add applesauce and eggs and mix well.
    Sift dry ingredients together. Add vanilla and all ingredients together.
    Pour into greased and floured loaf pan.
    Bake at 350\u00b0 for 1 hour or until knife inserted comes out clean.
