Squash Souffle - cooking recipe

Ingredients
    4 medium yellow squash
    1 medium onion, chopped
    salt and pepper to taste
    4 saltine crackers, crushed
    4 Tbsp. margarine, melted
    2 eggs, separated
    1/3 c. grated cheese
Preparation
    Steam onion and squash together until tender.
    Drain excess water and mash well.
    Add crushed crackers, salt, pepper, margarine, cheese and beaten egg yolks.
    Blend well.
    Fold in stiffly beaten egg whites.
