Porchetta (Roast Pork) - cooking recipe
Ingredients

1 fresh pork shoulder, boned
1 large piece finocchio (fennel) (just use leaves)
4 to 5 whole garlic cloves
salt and pepper to taste
Preparation

Spread porchetta flat lengthwise and make slits in meat, from top to bottom, all the way across the roast, about one inch apart, being careful not to cut through the meat.
Scatter garlic and finocchio over meat.
Add salt and pepper.
