Fruit And Bran Muffins(Makes 18 Muffins) - cooking recipe

Ingredients
    1 1/2 c. whole bran cereal (not bran flakes)
    1/2 c. boiling water
    1 egg or 2 egg whites, lightly beaten
    1 c. buttermilk
    1/2 c. honey
    1/4 c. melted butter, margarine or salad oil
    1 1/2 c. mixed dried fruit (choose from raisins, chopped dates, prunes or figs)
    1/2 c. chopped nuts (walnuts or almonds)
    1/2 c. whole wheat flour (unsifted)
    3/4 c. all-purpose flour (unsifted)
    1/2 tsp. salt
    1 1/4 tsp. soda
Preparation
    In a large bowl, combine the bran cereal with water; stir to moisten evenly, then allow to cool until lukewarm.
    Add the egg, buttermilk, honey, butter, dried fruit and nuts.
    Stir until well blended.
