Tomato Pilaf - cooking recipe

Ingredients
    1 vegetable bouillon cube
    1 c. rice
    1 small can peeled whole tomatoes
    1 small can crushed tomatoes
    3 Tbsp. butter
    salt and pepper to taste
    2 medium size zucchini, sliced
Preparation
    Boil rice in water as directed but add the bouillon cube so the rice will absorb the flavor.
    Fry the zucchini in 1 tablespoon butter until slightly brown.
    Combine the tomatoes in a separate pot and bring to a boil.
    Add butter and salt and pepper.
    Combine the zucchini and the tomato sauce.
    Add the cooked rice and bring to a final boil.
    Season with salt and pepper as desired and serve.
    Serves 2 to 4.
    This can be reheated using tomato juice to moisten.
