Spinach Puffs - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen chopped spinach, thawed
    1/2 c. chopped onion
    1/8 tsp. garlic powder
    2 eggs
    1/2 c. grated Parmesan cheese
    1/2 c. shredded Cheddar cheese
    1/4 c. plus 2 Tbsp. Blue cheese dressing
    1 (8 1/2 oz.) corn muffin mix
Preparation
    Combine the first 3 ingredients in a small pan; bring to boil and cook 10 minutes.
    Drain well; squeeze to remove excess liquid. Combine spinach mixture and remaining ingredients; stir well. Cover and chill 2 hours.
    Shape mixture into 1-inch balls; place 4 inches apart on lightly greased baking sheet.
    Chill at least 30 minutes before baking.
    Bake at 350\u00b0 for 20 minutes.
    Serve warm. Yields 4 dozen.
