Cuban Black Beans - cooking recipe

Ingredients
    11 oz. black beans
    2 green peppers, finely chopped
    1 large onion, finely chopped
    1/4 c. extra virgin olive oil
    salt and pepper to taste
    2 cloves garlic, minced
    6 c. water
Preparation
    Wash beans well.
    Boil beans for 2 minutes; simmer for approximately 1 1/2 hours, or until beans are tender.
    Add green peppers, onion, garlic and olive oil.
    Continue cooking for 1 hour, stirring occasionally.
    Add salt and pepper.
    Serve over rice.
