Dutch Updallas, Texas - cooking recipe

Ingredients
    2 c. potatoes
    1 c. onions
    2-3 eggs
    salt, pepper and oil
Preparation
    In a heavy skillet, fry diced potatoes and diced onions until brown.
    (Onions may be omitted)
    Stir and turn until tender and brown, turn the fire down and beat eggs in a bowl.
    Add to the skillet and fold until dry.
    Add salt and pepper, a little grated cheese is nice!
