Vidalia Onion Casserole - cooking recipe

Ingredients
    8 large Vidalia onions, cut in chunks
    1/4 c. margarine
    1/2 c. uncooked rice
    1 c. boiling salted water
    1 c. grated Swiss cheese or Velveeta
    2/3 c. half and half or 1 c. sour cream
Preparation
    Saute onions in butter until transparent, not brown. Meanwhile, cook rice in water for 5 minutes on low heat.
    Place rice, onions, cheese and half and half, stirred together, in a casserole baking dish.
    Bake 1 hour at 325\u00b0.
    Serves 8 to 10.
