"Ajvar" - Eggplant Relish - cooking recipe

Ingredients
    2 eggplants
    6 green peppers
    salt
    pepper
    1 clove garlic
    juice of 1 lemon
    parsley
    approximately 1/2 c. oil
Preparation
    Bake eggplants and peppers in 350\u00b0 oven for 30 to 45 minutes until tender.
    Turn peppers occasionally to prevent blistering. Remove skins and seeds while they are hot.
    Chop eggplants and peppers fine.
    Add salt, pepper and crushed garlic.
    Add lemon juice to taste and as much oil as the vegetables can absorb.
    Mix thoroughly; chill for several hours.
