Blood Sausage - cooking recipe

Ingredients
    1 qt. pork or beef blood (warm)
    2 c. rye meal
    1/2 c. sugar
    1 tsp. soda
    1 1/2 tsp. salt
    1/4 tsp. pepper
    3/4 lb. diced lard
    3/4 lb. diced pork
    10 tart apples, diced
    white flour to make a medium thin batter
Preparation
    Mix all ingredients and put into cloth casings, about 10 inches long, by 4 inches round.
    Leave room for expansion.
    Cook in boiling water for about 2 hours until done.
    Remove from bags, slice and fry in butter.
    Good with syrup and hot bread.
