King Ranch Chicken - cooking recipe
Ingredients

1 (3 lb.) fryer chicken
1 stick celery
1 medium onion
2 1/2 tsp. salt
2/3 c. tomato Ro-Tel with chilies (don't drain)
1 1/2 c. chicken broth
1 can cream of chicken soup
1 doz. tortillas
2 c. Cheddar cheese
Preparation

Boil chicken and 2 teaspoons salt in water until tender.
Bone and cut in pieces and save 1 1/2 cups of chicken broth.
Combine soup, tomatoes, chicken broth and 1/2 teaspoon salt in small saucepan and heat.
Layer chicken, tortillas (that have been cut in 1/2-inch strips), cheese, chopped onion and heated sauce in an electric skillet.
Repeat layers, ending with cheese.
Cook at 250\u00b0 for 20 minutes, then 200\u00b0 for 40 minutes.
Can layer in pan and bake at 350\u00b0 for approximately 1 hour.
