Vegetarian Spaghetti Sauce - cooking recipe

Ingredients
    1 jar tomato sauce (meatless)
    1 medium eggplant, peeled and diced
    1 green pepper
    1 red pepper
    1 whole onion, diced
    1 zucchini, peeled
    1 clove garlic
    1 tsp. Italian seasoning
Preparation
    Put jar of tomatoes in a 6-quart pot.
    Add eggplant, green pepper, red pepper, onion, zucchini and garlic and simmer 60 minutes on the stove.
    Or, use a microwavable 4-quart casserole dish and cook 30 minutes at Medium (50%), stirring every 2 minutes.
    When you take out of microwave, let sauce sit for 2 minutes and then pour over spaghetti or pasta of choice.
