Cranberry-Oat Bran Muffins - cooking recipe
Ingredients

2 1/2 c. oat bran
1 1/2 tsp. cinnamon
3 Tbsp. brown sugar
1 1/2 c. milk
2 tsp. vanilla
1/2 c. raisins
1/2 c. whole wheat flour
1 Tbsp. baking powder
3 egg whites, slightly beaten
1 Tbsp. Safflower oil
1 c. chopped cranberries mixed with 3 tablespoons apple juice concentrate
Preparation

Heat oven
to 425\u00b0.
Combine oat bran, flour, cinnamon, baking powder and\tbrown sugar in a mixing bowl;
blend with a fork. Beat
egg
whites,\tmilk,
oil,
vanilla, chopped cranberries and apple
concentrate in a separate bowl with a fork. Add liquid mixture to dry and stir until blended.
Fill muffin tins.
Place in oven.
Lower temperature to 400\u00b0.
Bake for 17 to 20
minutes. Cool
slightly
before
removing
from
tins. Makes 12.
