Banana Bran Muffins - cooking recipe
Ingredients

4 c. whole wheat pastry flour
2 c. unbleached flour
1 tsp. salt
4 tsp. baking soda
4 tsp. baking powder
2 c. bran (wheat or oat)
1/2 c. canola oil
1 1/2 c. maple syrup
3 c. soy milk
2 eggs
6 ripe bananas
Preparation

Sift the first 5 ingredients, holding back 1 cup pastry flour and the bran.
Mix oil and maple syrup.
Add eggs; mix.
Add milk quickly; mix.
Add wet to the dry mixture with a spatula until fairly smooth.
Add bananas, remaining flour and bran; mix just until wet.
Bake at 400\u00b0 for 20 to 25 minutes.
Check with a toothpick.
Yields approximately 24 muffins.
