Ingredients

2 c. rice (uncooked)
16 oz. nonfat cottage cheese
8 oz. pepper Jack cheese (Kraft is good, others may be too hot)
8 oz. Longhorn Cheddar
1/2 tsp. onion powder (optional)
1/2 tsp. garlic powder (optional)
Preparation

Prepare rice according to directions.
Shred cheeses and mix together.
In large shallow pan (a lasagna pan works well), layer 1/2 rice, 1/2 cottage cheese and 1/2 shredded cheeses.
Sprinkle lightly with onion and garlic powder, if desired.
Layer remaining rice, cottage cheese and shredded cheeses.
Bake at 350\u00b0 for about 45 minutes or until hot and just begins to brown.
