Granny'S Pecan Roll - cooking recipe

Ingredients
    1 (7 1/2 oz.) jar marshmallow cream
    1 tsp. vanilla
    1 lb. confectioners sugar
    1 lb. caramels
    8 c. coarsely chopped pecans
Preparation
    Combine marshmallow cream, sugar and vanilla, kneading the last of the sugar gradually.
    Shape into 8 rolls, 1 inch in diameter.
    Wrap and put in freezer overnight.
    Melt caramels in double boiler, adding a teaspoon of water at a time, until thick sauce-like consistency and all caramels are melted.
    Remove from heat, but keep over hot water.
    Dip rolls into caramels, then roll in chopped pecans.
    Press firmly into caramel with hands.
    Let cool.
    Keep in refrigerator.
