Potato Refrigerator Rolls - cooking recipe
Ingredients

1 1/2 c. warm water
1 pkg. dry yeast
2/3 c. sugar
1 1/2 tsp. salt
2/3 c. soft shortening
2 eggs
1 c. lukewarm mashed potatoes
7 to 7 1/2 c. flour
Preparation

In a bowl, dissolve yeast in warm water.
Stir in sugar, salt, shortening, eggs and potatoes.
Measure flour.
Mix in flour with hands until dough is easy to handle.
Turn onto lightly floured board.
Knead until smooth and elastic.
Place greased side up in greased bowl.
Place wax paper over dough.
Cover with a damp cloth.
Place in refrigerator about 2 hours or overnight.
Before baking, shape dough in cloverleaf rolls.
Cover and let rise until double, about 2 hours.
Bake at 350\u00b0 for 15 to 20 minutes.
