Spinach Cheese Bake - cooking recipe

1 Tbsp. butter
2 eggs
3/4 c. skim milk
1/4 c. flour
1/2 tsp. baking powder
1/4 tsp. salt
1/8 tsp. nutmeg
1 (10 oz.) pkg. frozen chopped spinach
2 c. Monterey Jack shredded cheese
Preparation

Thaw and drain spinach.
Preheat oven to 350\u00b0.
Place butter in an 8-inch square baking dish and set in oven long enough to melt butter, about 2 minutes.
Tilt dish to coat bottom and sides of dish; set aside.
In medium bowl, beat eggs lightly.
Stir in milk; add flour, baking powder, salt and nutmeg.
Beat or whisk just until mixture is smooth.
Stir in spinach and cheese.
Pour into prepared dish.
