Liver Dumpling Soup From Karl Ratzsch'S - cooking recipe
Ingredients

2 large onions, diced
4 Tbsp. melted butter
1 Tbsp. salt
1/2 Tbsp. white pepper
1/2 c. chicken base
1 tsp. beef base
5 Tbsp. marjoram
2 1/2 lb. ground beef liver
6 eggs
10 oz. beef suet
2 c. cracker meal
2 c. flour
1 gal. chicken stock
chopped parsley to garnish
Preparation

To make dumplings, saute onion in butter until translucent. Add salt, pepper, bases and marjoram.
Let cool.
In large bowl, place cooled onion mixture, liver, eggs, suet, cracker meal and flour and combine, using paddles.
Shape into dumplings with small scoop and drop into boiling stock.
Garnish with chopped parsley.
