Stuffed Zucchini - cooking recipe

Ingredients
    4 zucchini squash
    3/4 c. chopped onion
    1/2 c. vegetable oil
    1 clove chopped garlic
    3/4 c. chopped tomato
    1/2 c. chopped mushrooms
    1/2 c. breadcrumbs
    2 Tbsp. parsley
    1/2 tsp. salt
    1/2 tsp. pepper
    1/4 tsp. dried basil
Preparation
    Cook zucchini in small amount of water 3 minutes; drain and cool.
    Cut in 1/2 lengthwise; remove pulp, dice and reserve shell. Saute onion in 1/4 cup oil 5 minutes.
    Add zucchini pulp and garlic; saute 3 minutes.
    Stir in tomato and mushrooms; cook 5 minutes.
    Remove from heat.
    Mix in breadcrumbs, parsley, salt, pepper and basil.
    Spoon into zucchini shells.
    Place in oiled 12 x 8 x 2-inch baking dish.
    Sprinkle with 1/4 cup oil.
    Bake at 350\u00b0 for 30 minutes.
