Ingredients

1/3 c. flour
2/3 c. sugar
2 c. milk
2 eggs, separated
1/2 tsp. vanilla extract
1 small box vanilla wafers
3 to 4 sliced bananas
1/4 tsp. cream of tartar
1/4 c. sugar
Preparation

Combine flour and 2/3 cup of sugar in saucepan.
Mix well. Stir in milk and slightly beaten egg yolks.
Cook over medium heat, stirring constantly, until mixture thickens.
Cover bottom of an 8-inch lightly greased (spray with cooking spray) baking dish with a layer of vanilla wafers.
Top with half the bananas and half of the pudding.
Repeat layers, ending with pudding. Beat egg whites until soft peaks form.
Add cream of tartar, then gradually the sugar, continuing to beat until whites hold a peak but are not dry.
Spread evenly over pudding, sealing to the edge of the baking dish.
Bake at 350\u00b0 for 10 to 15 minutes or until golden brown.
Makes 4 to 6 servings.
