Caribbean Potato Salad - cooking recipe
Ingredients

1 medium red or white potato (5 to 6 oz.), cut into 1/2-inch cubes
1 1/2 Tbsp. canola oil
1 1/2 Tbsp. fresh lime juice
1 tsp. chili powder
1/4 tsp. salt or to taste
1/8 tsp. hot pepper sauce
1/2 c. canned black beans, rinsed and drained
1/3 c. frozen corn kernels, thawed
1/3 c. diced tomato
3 Tbsp. sliced scallions (green onions)
Preparation

In a small covered saucepan cook potato, covered in 2-inches boiling water, until just tender, about 10 minutes. Drain and cool.
