Rice Pilaf - cooking recipe
Ingredients

1 onion, diced
1/4 c. chopped mushrooms
1 small carrot, diced
1 stalk celery
1 green pepper, diced
3 Tbsp. olive oil
1 c. raw brown rice
2 c. vegetable stock or water
1/2 c. raisins or other dried fruit
1 tsp. curry or 1 bay leaf
few cardamon seeds
1/2 tsp. turmeric
1/2 tsp. ginger
1/4 tsp. garlic
1/4 tsp. cumin
1/4 tsp. cinnamon
4 whole cloves
1/2 c. pine nuts, chopped
peanuts, sunflower seeds or almonds
Preparation

Saute vegetable in oil.
When tender, add raw rice and stir over moderate heat until grains are dry.
Add spices and vegetable stock (or water).
Cover.
Cook over low heat 20 minutes. Sprinkle in nuts and fruit.
Cook 10 minutes more.
