Eggplant Skillet Dinner - cooking recipe

Ingredients
    1 lb. ground beef
    1/4 c. chopped onion
    1/4 c. chopped celery
    1 small eggplant, cut in 1/2-inch slices
    4 oz. shredded cheese (1 c.)
    1 (8 oz.) can tomato sauce
    1/2 c. water
    1/2 to 3/4 tsp. chili powder
    1/2 tsp. paprika
Preparation
    Cook beef, onion and celery until meat is browned.
    Drain off excess fat.
    Stir in tomato sauce, water and chili powder.
    Season eggplant slices with salt and pepper.
    Arrange on top of meat sauce.
    Cover and simmer until eggplant is tender, 15 to 20 minutes.
    Top with shredded cheese and sprinkle with paprika. Serve with Parmesan cheese.
    Yields 5 to 6 servings.
