Bakery Lane Soup Bowl'S Portuguese Vegetable Soup - cooking recipe

Ingredients
    1/2 lb. kielbasa sausage
    1 1/2 Tbsp. olive oil
    1/2 c. chopped onion
    1 clove garlic, chopped
    2 1/2 c. diced potatoes
    5 c. chicken stock or 2 (10 oz.) cans broth, diluted
    1 1/2 c. chopped tomatoes
    1/2 c. drained, canned kidney beans
    1/2 pkg. frozen spinach, thawed and drained or 1/4 lb. chopped kale, beet greens or bok choy
    salt and pepper to taste
Preparation
    Slice kielbasa thinly.
    Place in a skillet and cover with water.
    Bring to boil and cook until all water evaporates.
    Remove to paper towel with slotted spoon.
