Rainbow Veggie Tray - cooking recipe

Ingredients
    2 (7 oz.) jars baby corn-on-the-cob
    1 (12 oz.) jar whole baby carrots, drained
    2 (4.5 oz.) jars whole mushrooms, drained
    1 1/3 c. cider vinegar
    2/3 c. vegetable oil
    1/2 c. sugar
    1/2 tsp. salt
    1/2 tsp. pepper
    1 1/2 c. green peppers, diced
    1 c. purple onion, diced
    lettuce leaves
Preparation
    Place each of the first 3 ingredients separately into zip-top plastic bags; set aside.
    Combine vinegar and next 6 ingredients until sugar dissolves.
    Pour marinade equally over vegetables in plastic bags; seal securely and refrigerate 8 hours.
