Zucchini Goulash - cooking recipe

Ingredients
    2 to 4 zucchini
    1 small onion
    1 to 2 pkg. fresh mushrooms
    1 to 2 cans petite diced tomatoes with zesty jalapenos
    grated Mozzarella cheese
    olive oil
    salt and pepper to taste
    Wondra to thicken
Preparation
    Slice zucchini and onion and saute in olive oil. Slice mushrooms and add to zucchini.
    When vegetables are softened add the tomatoes and let simmer until all vegetables are softened and cooked well. (If juice is a little thin, add Wondra to thicken...or cornstarch.) Pour mixture into a casserole dish and cover with cheese. Bake until cheese is melted.
