Squash Casserole - cooking recipe

Ingredients
    6 to 8 medium sized yellow squash, sliced
    1 large onion, chopped
    1 lemon
    1 c. Cheddar cheese, grated
    1 c. bread crumbs
    salt and pepper to taste
Preparation
    Combine the squash and onion in a saucepan with a small amount of water and boil until tender.
    Drain and mash.
    Add grated rind and juice of lemon, along with half the cheese, half the bread crumbs, salt and pepper.
    Stir together.
    Pour into 1-quart casserole and top with remaining cheese and bread crumbs.
    Bake at 350\u00b0 for about 30 minutes or until the top is brown and bubbly.
