Potato Croquettes - cooking recipe

Ingredients
    mashed potatoes (made from 4 cooked potatoes)
    1/2 c. grated Cheddar cheese
    1 tsp. salt
    1/8 tsp. ground pepper
    1/4 tsp. nutmeg
    1 egg yolk, lightly beaten
    1 egg white
    1 c. fine dry bread crumbs (Italian style)
    1/4 c. grated Parmesan cheese
    1 1/2 to 2 qt. vegetable oil
Preparation
    Combine the potatoes with the Cheddar cheese, salt, pepper and nutmeg.
    Taste for seasoning and blend in the egg yolk.
    Beat the egg white lightly in a shallow bowl.
    Combine the bread crumbs and Romano cheese in a second bowl.
    Shape spoonfuls of the mashed potatoes into 20 even-sized balls and flatten each one slightly. Dip each croquette into the beaten egg white and then into the cheese-crumb mixture, being sure to coat each one evenly.
