Double Baked Sweet Potatoes - cooking recipe

Ingredients
    6 large (baked) sweet potatoes
    6 tbsp. apple juice
    1/2 c. squeeze parkay margarine
    2 tbsp. packed brown sugar
    1/2 tsp. ginger
    Coco mallow topping
Preparation
    Slice potatoes in lengthwise. Scoop out center. Leaving 1/8 inch shell. Mash potatoes; add apple juice, margarine, brown sugar, and ginger. Beat until fluffy. Top with coco mallow topping. Bake at 350\u00b0F 20 -25 minutes.
