3 medium leeks, sliced thin
1 lb. carrots, sliced thin
1/2 lb. small potatoes, quartered
1 large rib celery, sliced thin
5 c. defatted chicken stock
1 1/2 tsp. tarragon leaves, crushed
salt, white pepper and chopped watercress (optional)
