Chicken Scarperello - cooking recipe
Ingredients

1 red bell pepper
1 large onion
2 Tbsp. extra virgin olive oil
16 oz. Italian sausage, sliced
16 oz. chicken breast, boned, skinned and cut in small pieces
1/2 c. dry white wine
salt and pepper
Preparation

Saute sausage in olive oil until golden.
Drain off excess oil and add sliced bell pepper and onion.
Cook 10 minutes on medium heat.
Add chicken and white wine.
Cook on high until done, 10 to 15 minutes.
Add salt and pepper to taste.
Serves 2 to 4 people. Serve alone or over rice or pasta.
