Chicken Cacciatore - cooking recipe

Ingredients
    2 large boneless, skinless chicken breasts
    2 to 3 Tbsp. flour
    1 tsp. canola oil
    1 c. sliced mushrooms
    1/2 c. dry white wine
    1/4 c. chicken broth
    1/4 c. tomato paste
    2 Tbsp. brandy or sherry
    1/4 c. chopped shallots
    2 Tbsp. minced garlic
    1 tsp. salt
    pepper to taste
    1 bay leaf
    1/2 tsp. basil
Preparation
    Coat chicken with flour.
    Heat a frypan and rub with 1 teaspoon canola oil. Cook chicken until golden brown. Add remaining ingredients. Simmer, covered, for 1 hour. Serve with cooked pasta or rice. Serves 2.
