Beef Zucchini Casserole - cooking recipe

Ingredients
    1 1/2 lb. small cubed unpeeled zucchini
    1 lb. lean ground beef
    1/2 cup chopped onions
    1 tsp salt or garlic salt
    2 cups cooked rice
    1 pt. cottage cheese
    1 (10 3/4 oz.) can cream of mushroom soup
    buttered bread crumbs
Preparation
    Cut zucchini (do not peel) into 1 inch cubed pieces and cook in boiling salt water until barely tender.
    Drain well.
    Brown beef and onion; drain.
    Add salt and cooked rice to beef mixture. Place 1/2 of zucchini in 3 quart dish (casserole).
    Spread beef mixture over zucchini.
    Cover with cottage cheese; then add the remaining zucchini.
    Spread mushroom soup over the zucchini--top with butter bread crumbs.
    Bake at 350 degrees for 35 to 40 minutes.
