Corn Relish(Salt Free) - cooking recipe
Ingredients

3 c. cooked corn, scraped from the cob
1/2 sweet red pepper, seeded and diced
1/2 green pepper, seeded and diced
4 whole scallions, thinly sliced
1/2 tsp. ground cumin
3 Tbsp. vegetable oil
1 1/2 Tbsp. wine vinegar
freshly ground black pepper to taste
Preparation

Put the corn in a serving bowl, add remaining ingredients and mix well.
Crunchy and colorful.
Great side dish to serve with sandwiches.
Will stay for 2 weeks in refrigerator if tightly sealed.
