Brian'S Grilled Ginger Salmon(Servings: 4) - cooking recipe

Ingredients
    1 large salmon fillet
    1/2 c. soy sauce
    1 piece fresh ginger root, grated
    1 1/2 Tbsp. brown sugar
    2 Tbsp. olive oil
    1 Tbsp. garlic, minced
    1 dash cayenne pepper
    1 Tbsp. basil
    1 tsp. mirin
    1 Tbsp. cornstarch
    3 Tbsp. cold water
Preparation
    Combine soy, ginger, brown sugar, olive oil, garlic, cayenne, basil and mirin in saucepan.
    Bring to boil, stirring lightly. Pour sauce over salmon fillet and allow to marinate 30 minutes at room temperature.
    After 30 minutes, pour marinade back into saucepan.
    Cut salmon fillet into large steak (for ease of cooking).
    Grill over very hot fire (cook skin side down first) for 2 to 3 minutes per side, no longer.
    Bring marinade back to boil. Mix 1 tablespoon of cornstarch and 3 tablespoons of water.
    Add cornstarch to marinade.
    Cook at high heat until thickens.
    Pour sauce over salmon and serve.
    Suggested Wine:
    Macon Villages - White Burgundy.
    Serving Ideas:
    Angel hair and pesto sauce is good.
