Roasted Vegetables - cooking recipe

Ingredients
    1 red bell pepper, seeded and cut into strips
    1 yellow bell pepper, seeded and cut into strips
    2 red onions, peeled and cut into wedges
    2 small summer squash, cut into 1/2-inch thick strips
    2 zucchini, cut into 1/2-inch thick strips
    4 cloves garlic, peeled and thinly sliced
    1 Tbsp. olive oil
    1 Tbsp. chopped fresh oregano
    2 Tbsp. chopped fresh parsley
    1 Tbsp. balsamic vinegar
Preparation
    Preheat oven to 425\u00b0.
    In a large bowl, toss together peppers, onions, squash, zucchini, garlic, olive oil and oregano.
    Spread the vegetables on a baking sheet or metal roasting pan and roast for 20 minutes, or until tender, stirring several times.
