Eggplant Casserole - cooking recipe

Ingredients
    2 medium eggplant
    1 onion, chopped
    1 green pepper, chopped
    1 Tbsp. bacon drippings
    1 egg, beaten
    1 c. bread crumbs (seasoned)
    1/2 tsp. salt
    1/2 tsp. pepper
    3/4 c. grated cheese
    1 to 2 Tbsp. picante sauce
    1/2 c. grated Parmesan cheese
Preparation
    Peel eggplant and cook until tender. Drain well and mash. Saute onion and green pepper in bacon drippings.
    Remove from heat and add egg, salt, pepper and onion mixture.
    Spoon half of the mixture into greased 1 1/2-quart casserole. Sprinkle with cheese. Spoon remaining eggplant over the cheese and top evenly with picante sauce. Sprinkle with Parmesan.
    Bake at 350\u00b0 for 30 minutes.
