Vegetarian Cashew Chili - cooking recipe

Ingredients
    2 c. pinto beans (canned okay, rinse well)
    1 c. garbanzo beans (canned okay, rinse well)
    2 Tbsp. vegetable oil
    1 onion, chopped
    1 green pepper, chopped
    2 stalks celery, chopped
    1 Tbsp. butter
    2 Tbsp. ground cumin
    1 Tbsp. ground coriander
    1/4 tsp. cayenne pepper
    1/2 tsp. oregano
    1/2 tsp. basil
    1/2 tsp. dill weed
    1/2 tsp. black pepper
    2 tsp. salt
    1 qt. chopped, canned tomatoes
    1/2 c. cashews (optional)
Preparation
    Cook celery, green pepper and onion in oil until tender.
    Melt butter in.
    Add spices, herbs and salt.
    Simmer 1 to 2 minutes. Add tomatoes and simmer 10 minutes.
    Add beans.
    Simmer 30 minutes.
    Sprinkle cashews over chili when serving, if desired.
