Green Chili Lopez Style - cooking recipe
Ingredients

2-4 lbs. pork shoulder, fat trimmed and cubed 1/2 x 1/2 inch (do not discard bone)
Oil
1/2 c. flour
2-3 c. cold water
1 bag, or 5-7 Hatch chilies, roasted, peeled and diced
1 can whole peeled tomatoes, diced
1 tsp. salt
1 tsp. diced garlic
Preparation

On medium high heat, combine oil and pork shoulder and cook meat with bone until slightly toasted. Meanwhile, brown flour in separate pan. After flour is lightly browned, add 2-3 cups cold water and bring to boil, whisking together to remove any lumps (less water for thicker consistency, or more water for thinner consistency). Add pork, chilies, peeled tomatoes, salt and garlic to gravy mixture. Cover and simmer 20-30 minutes. Serve with rice and beans.
