Spinach Mushroom Burrito - cooking recipe

Ingredients
    1 whole wheat tortilla
    1/2 c. fresh spinach, chopped
    3 Tbsp. grated Monterey Jack cheese
    2 mushrooms, sliced
    2 tsp. vegetable oil
Preparation
    Saute mushrooms in oil.
    Add a little water and steam; add salt and pepper.
    Place spinach on open tortilla; add mushrooms and cheese.
    Broil in toaster oven about 2 minutes until spinach wilts and cheese melts.
    Fold tortilla burrito-fashion and serve with sour cream and Oasis salsa.
